Corn Shuckers 2018

Mid-July means a robust harvest of sweet corn from the Maple Mount farm needs to be shucked, cut and cleaned so it can be enjoyed by the Ursuline Sisters and their staff. That takes an abundance of help, some of which was on hand July 16, 2018. Here are some photos from the process.

The farm staff picked corn on July 13 and again on the morning of July 16. These are just some of the pans that were still in need of shucking after an hour.

Once stripped and cut, the corn is taken into the kitchen to be blanched in hot water, then put in an ice bath. Most of the corn is then frozen, so the sisters and staff can eat it year round.
