To help us journey through Lent in 2024, we asked the Ursuline Sisters of Mount Saint Joseph about a favorite book they read during these 40 days, or perhaps a favorite meatless meal recipe. We call this feature “How We Observe Lent.” Each week of Lent features a different Sister’s spiritual practice. Our contribution today is from Sister Jane Falke, who ministers in Kansas.
“Many years during Lent, I like to get a Lenten reflection booklet. I have a four-step process I go through each day.
“First, I read the reflection.
“Then, I think about it for a while.
“Next, I write something from my reflection.
“Finally, I decide on a small action I can take, and I write that down too.
“This year I am using Lent 24: The Season for Healing Hearts from Twenty-Third Publications.
“As a bonus I am adding a salmon patties recipe that goes back to my childhood days. My mother taught me how to make it.”
Salmon Patties
Ingredients
- 1 (14.75 ounce) can canned salmon
- ½ cup seasoned dry bread crumbs
- ¼ cup chopped onion
- 1 large egg
- 1 tablespoon olive oil
Directions

Drain and reserve liquid from canned salmon, place salmon in a medium bowl. Add bread crumbs, onion, and egg; mix well to combine.

Shape mixture into patties, adding reserved liquid from salmon if the mixture is too dry.

Heat oil in a large skillet over medium heat; add patties and cook until golden brown, about 3 to 4 minutes per side. Drain on paper towels and serve.
